    In a bowl, combine the chicken, mirin, cornstarch, salt, and white pepper. Stir to mix, then set aside while you prepare the remaining ingredients.

    In a bowl, whisk together the oyster sauce, mirin, rice wine vinegar, honey, soy sauce, cornstarch, and sesame oil until well blended. Set the sauce aside.

    Cut the green beans in half and set them aside. Halve the onion, then slice it into 1/4-inch wedges.

    Heat 1 tablespoon peanut oil in a wok over medium-high heat. Add the onion and cook, stirring often, for 1 minute. Add the green beans and continue to cook and stir for 2 minutes. Pour in the water and cook until the water evaporates and the beans are crisp-tender, about 2 more minutes. Transfer the green bean mixture to a large bowl.

    Heat the remaining 1 tablespoon oil in the same wok over high heat. Cook the chicken undisturbed in a single layer for 1 minute. If needed, cook the chicken in two batches to avoid overcrowding. Flip the chicken and stir-fry for 1 minute. Add the garlic and stir frequently for 2 minutes. Return the green bean mixture to the wok, then add the sauce. Stir to combine and cook for 1 to 2 more minutes until heated through and the sauce thickens.
