Strawberry Tarts

These mini tarts feature crisp baked shells filled with fresh strawberries and finished with a clear apple-juice glaze that sets to a glossy sheen. The fruit-forward flavor is bright and lightly sweet, with a delicate crunch from the pastry. Serve Strawberry Tarts chilled for spring gatherings, afternoon treats, or an elegant finish to a summer meal.

  1. 1

    Assemble the ingredients.

  2. 2

For the glaze, mix the sugar, cornstarch, and salt; then stir this into the apple juice. Cook over medium heat, stirring constantly, until it becomes smooth and thick. Let it cool for 10 minutes.

  3. 3

Lightly brush some glaze over the bottom of each pastry crust. Place the strawberries on top of the glaze, slicing them if needed to fit. Gently spoon the remaining glaze over the strawberries, making sure they are well covered.

  4. 4

Refrigerate the strawberry tarts for 2 to 4 hours.
