  1. 1

Combine warm water, yeast, and 1 pinch white sugar in a large bowl; let stand until creamy, about 5 minutes.

  2. 2

At the same time, grease a separate large bowl and set it aside.

  3. 3

Stir warm milk, eggs, 1/3 cup vegetable oil, 1/3 cup white sugar, salt, and vanilla into the yeast mixture until the sugar dissolves.

  4. 4

Stir in 2 1/2 cups flour until no dry spots remain.

  5. 5

Turn the dough out onto a floured surface and knead in the remaining flour, 1/2 cup at a time, until the dough is no longer sticky.

  6. 6

Continue kneading until smooth and elastic, about 10 minutes.

  7. 7

Shape the dough into a ball and place it in the prepared bowl.

  8. 8

Cover with a towel and let rise in a warm spot until doubled in size, about 1 hour.

  9. 9

Punch down the dough and knead a few times to reshape.

  10. 10

Pinch off a piece of dough about the size of an egg and roll it into an oval about 1/4-inch thick.

  11. 11

Place on a dish towel, cover with another dish towel, and repeat with the remaining dough.

  12. 12

Heat 4 inches of oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C).

  13. 13

Prepare the cinnamon sugar: Mix white sugar and cinnamon in a shallow dish or pie plate; set aside.

  14. 14

Carefully lower the dough into the hot oil in batches and fry until golden brown, 1 to 2 minutes per side.

  15. 15

Drain on a paper towel-lined plate.

  16. 16

While still warm, gently press the fried dough into the cinnamon sugar, then shake off any excess sugar.
