    Gather all the ingredients. Preheat the oven to 350 degrees F (175 degrees C).

    In a medium bowl, stir together the brown sugar, flour, melted butter, salt, and 1/2 teaspoon of the cinnamon until the mixture is crumbly; set aside.

    Lightly coat a 9- x 13-inch baking dish with cooking spray.

    In a large bowl, whisk the milk, heavy cream, eggs, maple syrup, vanilla, and the remaining 1 1/2 teaspoons cinnamon until fully combined.

    Toss the cubed brioche in the milk mixture until all pieces are moistened. (The milk mixture will not be completely absorbed.)

    Transfer the mixture to the prepared baking dish, and sprinkle evenly with the granulated sugar.

    Sprinkle the brown sugar mixture evenly over the top of the bread mixture. Let the casserole stand for 10 minutes at room temperature.

    Bake in the preheated oven until the casserole is set and the bread is golden brown and puffy, 35 to 40 minutes.
