Tofu Burgers

    Bring a large saucepan of water to a simmer. Leave the frozen tofu in its package and submerge it in the water. Take the pan off the heat and let the tofu thaw in the hot water for about 20 minutes.

    Remove the tofu from the package and set it on a plate. Place another plate on top of the tofu and put a 3- to 5-pound weight on it. Press the tofu for 20 to 30 minutes, then drain and discard the liquid that collects.

    While the tofu drains, heat 2 teaspoons oil in a small skillet over medium heat. Add the onion and celery; cook, stirring, until soft and lightly browned, about 5 minutes. Take the skillet off the heat.

    Finely chop the tofu and place it in a mixing bowl. Add the onion and celery mixture, Cheddar, egg, salt, and pepper, then mix until fully combined.

    Pour 1/4 inch oil into a large skillet and heat over medium-high. Drop the tofu mixture into the skillet in six equal portions and flatten with a spatula to make patties. Fry until golden brown, 5 to 7 minutes per side.
