No-Bake Stovetop Meringue

No-Bake Stovetop Meringue whips into a billowy, glossy topping with a creamy texture and superb stability. The hot syrup gives it a smooth, marshmallow-like bite that holds up beautifully on pies, parfaits, and layered desserts. Serve it when you want a polished finish that won’t weep, especially for lemon, chocolate, or banana cream pies.

No-Bake Stovetop Meringue
  1. 1

In a small saucepan, mix together the sugar, corn syrup, water, cream of tartar, and salt. Cook over medium heat, stirring constantly, until it boils and the sugar dissolves. Take off the heat.

  2. 2

In a medium mixing bowl, beat the egg whites until foamy. With the mixer on medium speed, slowly pour the hot syrup mixture into the egg whites. Increase the mixer to high speed and beat until stiff peaks form. Spread over the top of the pie, fully covering the filling. You may brown the meringue in the oven if desired.
