    Dissolve the sugar and yeast in warm water in a bowl. Let it sit until the yeast softens and forms a creamy foam, 5 to 10 minutes.

    In the bowl of a stand mixer fitted with the paddle attachment, combine the yeast mixture, rice flour, sorghum flour, potato starch, cornstarch, vegetable oil, eggs, xanthan gum, and salt; beat on medium speed until mixed, about 2 minutes. Transfer the dough to the prepared loaf pan and smooth the top with the back of a wet spoon.

    Set the dough in a warm spot until it rises just above the rim of the pan, about 1 hour.
