    Combine the corn, beans, spinach, jalapeno Jack cheese, Cheddar cheese, green chiles, green onions, salt, cumin, and chili powder in a large bowl to make the filling.

    Place an egg roll wrapper on a diagonal. Lightly wet all 4 edges with water using your finger. Spoon about 1/4 cup of the filling into the center. Fold one corner over the filling, then tuck in the sides to create a roll. Repeat with the remaining wrappers and lightly spray each egg roll with cooking spray.

    Preheat an air fryer to 390 degrees F (199 degrees C). Arrange the egg rolls in the basket so they do not touch; cook in batches if needed. Fry for 8 minutes, then flip and continue cooking until the skins are crispy, about 4 minutes more.
