Air Fryer Mashed Potato Cakes
Air Fryer Mashed Potato Cakes turn leftover mash into golden, crisp-topped patties with a soft, cheesy center and a hint of chive. Lightly seasoned and coated in panko for extra crunch, they’re ideal as a snack, side dish, or brunch bite when you want something comforting yet texturally satisfying.

Set the air fryer to 380 degrees F (190 degrees C) and let it preheat while you make the potato cakes.

If using a basket-style air fryer, cut two strips of heavy-duty aluminum foil about 4 inches wide and 16 inches long to make a foil sling, and spray the sling with cooking spray. For a tray or rack-style air fryer, trim the long edges of the foil to fit the tray or rack.

Crack the egg into a mixing bowl and lightly beat it with salt and pepper.

Stir in the cold mashed potatoes, 2 Tablespoons flour, and Cheddar cheese. Divide the potato mixture into 6 equal portions.

Combine the panko and 1/2 cup flour on a plate.

Place one portion of the potato mixture on the plate and flatten it into a cake about 4 inches wide. Scoop up some of the flour and panko and press it onto the top. Set it on the oiled foil sling.

Repeat until all the potato cakes are shaped and set on the oiled slings, arranging three patties close together on each sling. Leave enough foil at both ends of the sling to lift the cakes in and out of the basket. See note. Generously spray the tops of the cakes with olive oil.

Carefully lift each sling and place it in the air fryer basket, letting the foil ends run up the sides of the basket. (See Cook's Note).

Air fry until they reach your preferred doneness, about 10 minutes.

Carefully remove the slings from the air fryer. Use a spatula to transfer the cakes to a serving plate, sprinkle with chives, and serve.
