Air Fryer Oven Pork Jerky

Air Fryer Oven Pork Jerky delivers a subtly spicy, sesame-kissed chew with savory soy depth and a gentle tang from rice vinegar. Ground pork takes on the marinade evenly, then dries low and slow for a firm, satisfying bite perfect for road trips, hikes, or snacking between meals. Serve it when you want a portable, protein-forward treat.

  1. 1

Combine the ground pork, sesame oil, Sriracha, soy sauce, vinegar, salt, pepper, onion powder, and curing salt in a large bowl and mix until evenly blended. Cover and refrigerate for 8 hours.

  2. 2

Using a jerky gun, shape as many sticks as will fit on all three air fryer oven racks. They will shrink almost right away, so place them close together and use the full length of the racks. (I got 21 sticks the first time.) Cover and refrigerate any leftover pork mixture.

  3. 3

Set the air fryer to 160 degrees F (71 degrees C). Insert all 3 racks into the oven and cook for 1 hour.

  4. 4

Remove the racks from the oven, blot off any excess moisture with paper towels, flip each stick, and cook for 1 more hour. Repeat this once more.

  5. 5

Move the jerky sticks to a baking sheet lined with paper towels. Cover with another layer of paper towels and let them sit out until dried, about 8 hours.

  6. 6

Meanwhile, repeat Steps 2 through 5 to make the remaining jerky using the leftover pork mixture.
