In a shallow bowl, whisk together the buttermilk, egg, flour, chile and lime seasoning, and adobo seasoning to make the batter. Cover and chill for 30 minutes.

In a shallow dish, combine the panko, adobo seasoning, and chile and lime seasoning; mix well. Take the batter out of the refrigerator. Dip the onion rings into the batter, then into the bread crumb mixture, turning to coat, and gently shake off any excess crumbs. Lightly spray both sides of the onion rings with cooking spray.
