Preheat the oven to 350 degrees F (175 degrees C).

In a Dutch oven, melt 1 tablespoon butter over medium heat. Add the onion and cook until very soft and starting to brown. Take off the heat, then stir in the apple, celery, and dried cranberries. Season with salt.

Lay each chop flat on a cutting board. Holding a sharp knife parallel to the board, cut a pocket in each chop, keeping three sides intact. Stuff each chop with the apple-cranberry mixture.

Melt the remaining 1 tablespoon butter in the Dutch oven over medium heat. Pan-fry the chops in the butter for 2 minutes per side. Remove from the heat.

In a small bowl or measuring cup, stir together the apple juice, cornstarch, and brown sugar; pour into the Dutch oven. Cook, stirring often, until the liquid reduces by half. Season to taste with black pepper. Serve the apple glaze over the pork chops.
