Apple-Potato Latkes

Apple-Potato Latkes blend tender potato with crisp, lightly sweet apple for fritters that fry up with lacy, golden edges and a hint of maple and nutmeg. They’re balanced with a gentle saltiness and subtle warmth, perfect for a cozy side or snack. Serve hot from the pan alongside sour cream or applesauce for weeknight dinners or festive gatherings.

Apple-Potato Latkes
  1. 1

Make a deep vertical cut on each side of the potato and the apple.

  2. 2

Attach the potato to a spiralizer fitted with the small shredding blade and cut it into thin shreds. Repeat with the apple. Spread the shredded potato and apple on several layers of paper towels and squeeze to remove as much moisture as possible. Transfer them to a bowl.

  3. 3

Mix the egg, flour, maple syrup, salt, and nutmeg into the bowl.

  4. 4

Heat the vegetable oil in a skillet over medium heat. Spoon 2 tablespoons of the potato mixture into the skillet and flatten it slightly with a spatula. Cook until golden brown, 3 to 4 minutes per side. Drain on a plate lined with paper towels. Repeat with the remaining mixture, adding more oil if needed.
