Chicken and Dumplings with Bacon
  1. 1

Place the bacon in a large, deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble, and set aside; keep the bacon drippings in the skillet.

  2. 2

Add the potatoes, onion, and chicken to the bacon drippings and cook for 15 minutes, stirring occasionally. Pour in the chicken broth; season with poultry seasoning, salt, and pepper. Stir in the corn, then simmer everything together for 15 minutes.

  3. 3

Pour in the half-and-half and bring to a boil; add the crumbled bacon. In a medium bowl, combine the biscuit mix with the milk and mix well (the dough should be thick). Drop tablespoon-sized portions of dough into the boiling mixture; reduce the heat and simmer for 10 minutes uncovered, then for another 10 minutes covered. (Do not stir while simmering, or the dumplings will break apart). Serve hot.
