Assemble all the ingredients.

Season the turkey chops with poultry seasoning, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and cayenne pepper.

Put the flour in a shallow dish. Dredge the chops in the flour to coat, then reserve the remaining flour (about 2 tablespoons).

Heat the oil in a 12-inch skillet over medium-high heat. Add 2 chops at a time to the skillet and cook until well browned and no longer pink in the center, 6 minutes, turning once. Remove the chops from the skillet and cover to keep warm. Repeat with the remaining chops.

Wipe out the skillet to remove any excess flour coating, if needed.

Add the butter to the same skillet and set over medium heat. Add the mushrooms and onion to the skillet. Cook, stirring, until tender, scraping up the browned bits from the bottom with a wooden spoon, about 8 minutes. Stir in the garlic and cook until fragrant, 1 minute more.

Sprinkle the reserved flour over the vegetables. Cook and stir for 1 minute so the flour does not taste raw. Pour in the broth and half and half; season with the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook and stir until the mixture is thickened and bubbling, 6 to 8 minutes.

Return the chops to the skillet and heat through, about 2 minutes. Garnish with parsley.
