Coat a large pan with cooking spray. Add the onion and cook over medium heat, stirring, until translucent, about 5 minutes. Add the frozen vegetables and the butter; cook and stir, letting the butter melt and the vegetables thaw, 3 to 5 minutes.

Pour the sesame oil into the center of the pan and stir the rice mixture until coated. Push everything to the sides of the pan again. Crack the eggs into the center of the pan. Scramble in the center until set, 2 to 3 minutes, then stir into the rice mixture until well combined.
