Mini Turkey Pot Pies

    Melt the butter in a large saucepan over medium heat. Add the onion, celery, flour, rosemary, thyme, and pepper, and cook for 3 minutes, stirring constantly.

    Gradually add the broth, stirring until smooth. Continue cooking, stirring constantly, until thickened. Stir in the turkey, green beans, and peas and carrots. Spoon the mixture into four (10-ounce) ramekins.

    Cut 4 circles from the puff pastry sheet, using the outer edge of a ramekin as a guide. Lay the pastry over the turkey mixture in each ramekin. Mix the egg and water in a small bowl and brush it over the pastry. Set the ramekins on a rimmed baking sheet.
