Barbequed Pineapple

Barbequed Pineapple features juicy rings soaked in a spiced rum and brown sugar marinade, then grilled until caramelized with smoky char marks. Warm cinnamon, ginger, nutmeg, and cloves accent the fruit’s natural sweetness for a dessert or cookout side that tastes both tropical and toasty. Serve at summer gatherings or as a flavorful finish to a grilled meal.

  1. 1

Peel and core the whole pineapple, then cut it into eight rings. Put the pineapple rings in a shallow dish or a resealable plastic bag. In a small bowl, combine the rum, brown sugar, cinnamon, ginger, nutmeg, and cloves. Pour the marinade over the pineapple. Cover and refrigerate for 1 hour to overnight.

  2. 2

Preheat the grill to high heat. Lightly oil the grate.

  3. 3

Take the pineapple rings out of the dish and save the remaining marinade for serving.

  4. 4

Grill the pineapple rings until dry and marked with char, about 7 minutes per side. Serve with the remaining marinade.
