Fresh Pineapple Dessert

Fresh Pineapple Dessert features juicy wedges of pineapple nestled in their skins, sprinkled with brown sugar and coconut, then broiled until caramelized and toasty.     Preheat the oven broiler and position the oven rack about 6 inches from the heat source.

    Slice off the top and bottom of the pineapple. Cut it into quarters and remove the core from each piece. Place each section skin side down and, using a sharp knife, loosen the fruit from the skin while leaving the fruit resting on the skin for presentation. Slice the fruit for easy eating. Set on a baking sheet and sprinkle each section with 2 tablespoons each of brown sugar and coconut.
