Lager-Glazed Bratwursts with Sauerkraut

Lager-Glazed Bratwursts with Sauerkraut pairs juicy bratwurst with a beer-reduced glaze that leans malty, lightly sweet, and tangy. Caraway, celery seed, and dill add a gentle aromatic snap, while the sauerkraut balances richness with bright acidity. Serve for a hearty weeknight dinner or a game-day spread alongside mustard and crusty rolls.

Lager-Glazed Bratwursts with Sauerkraut
  1. 1

Use a mortar and pestle to crush the celery seeds and caraway seeds until finely ground.

  2. 2

In a bowl, combine the beer, brown sugar, dry mustard, onion powder, pepper, dill, and the crushed seeds, stirring until the brown sugar dissolves.

  3. 3

Set the brats in a large nonstick skillet over medium heat. Pour the beer mixture over them and bring it to a boil. Lower the heat to low, cover, and simmer for 10 minutes.

  4. 4

Uncover and raise the heat to medium. Boil the sauce until it reduces to a thick, syrupy consistency, about 20 minutes. Tilt the skillet to roll the brats in the sticky sauce until fully coated. Move the brats to a plate and cover to keep warm.

  5. 5

Add the sauerkraut to the skillet and stir to mix it with any remaining sauce; cook for 5 to 8 minutes. Transfer the sauerkraut to a serving platter and place the warm brats on top.
