Pork Chops and Sauerkraut

    Warm oil in a large skillet over medium heat. Add the pork chops and brown them on all sides. Take them out of the pan.

    Add sauerkraut, onion, apple juice, garlic, and caraway seeds to the hot skillet; season with salt and pepper and sauté for 3 to 4 minutes.

    Set the browned pork chops on top of the sauerkraut mixture. Cover, lower the heat to low, and cook until the pork is no longer pink in the center, about 20 minutes.

    Check with an instant-read thermometer inserted into the center; it should register at least 145 degrees F (63 degrees C).
