  1. 1

In a bowl, combine 2 cups bread flour, warm water, yeast, and salt using an electric mixer fitted with a dough hook. Mix on the lowest speed until combined but still moist, about 2 minutes. Cover the bowl with a towel and let it rise in a warm spot until the dough doubles in size, about 20 minutes.

  2. 2

Uncover the bowl and mix with the electric mixer on low speed until the dough comes together, about 5 minutes. Gradually sprinkle in the remaining 1 cup flour, a little at a time, until a soft, sticky dough forms, 1 to 2 minutes.

  3. 3

Increase the mixer speed to medium and mix until the dough pulls away from the sides of the bowl, about 8 minutes. Cover the bowl with a towel and let it rest, about 20 minutes.

  4. 4

In the meantime, rub olive oil evenly inside a plastic container.

  5. 5

Move the dough to a floured work surface. Dust your hands with flour and knead the dough until soft but still wet inside. Shape it into a ball and place it in the prepared container. Refrigerate the dough for at least 1 day and up to 7 days.
