Classic Buckwheat Blini

Classic Buckwheat Blini are petite pancakes with a tender, airy crumb and a gentle nutty flavor from buckwheat. The yeast-raised batter gives them a light lift, making them ideal for elegant appetizers topped with caviar, smoked salmon, or crème fraîche. Serve warm at brunches, festive gatherings, or as a refined starter for dinner parties.

  1. 1

Pour warm milk into a large bowl, sprinkle the yeast over the milk, and let it soften for 5 minutes. Stir in the sugar and buckwheat flour, cover, and let rise for 1 hour.

  2. 2

Stir in the eggs, sour cream, heavy cream, salt, and flour until a batter forms. Cover again and let rise for 2 hours.

  3. 3

Heat a large skillet over medium heat. Coat with cooking spray, then pour small amounts of batter to make 1 1/2-inch blinis. Cook until the blinis start to set and dry and the bubbles begin to burst, about 2 minutes. Flip and cook until browned on the second side, about 1 minute.
