Gradually add 1 1/2 cups plus 2 1/2 tablespoons buckwheat flour and the whole wheat flour, whisking until blended. Do not worry if the mixture seems too thin; it works well. Stir in 1 tablespoon vegetable oil.

    Heat a frying pan over medium-high heat. Lightly brush the bottom with oil, then pour in 1 ladle of batter while swirling to spread it into a thin, even layer. Cook until bubbles form and the crepe is browned on the bottom, 1 to 3 minutes, flip, and cook the other side the same way. Transfer to a plate and repeat with the remaining batter, adding more oil as needed.
