Assemble all ingredients. Preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch baking dish.

Toss the cauliflower florets with olive oil and salt in a large bowl. Spread the florets in the prepared baking dish and bake for 25 minutes, stirring once, until tender. Remove from the oven.

Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 10 minutes. Drain the slices on paper towels, then crumble.
