Bacon Swiss Potato Cauliflower Casserole
Bacon Swiss Potato Cauliflower Casserole layers tender potatoes and cauliflower with smoky bacon and a lush blend of Swiss and mozzarella for a deeply savory, cheesy bake. The sauce is rich and peppery with a hint of garlic, while the top turns golden and bubbly in the oven. Serve it as a cozy side for steak night or as a hearty companion to roasted meats.

- 1
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
- 2
Put the potatoes and cauliflower in a large pot and cover with water; bring to a boil. Reduce the heat to medium-low and simmer until tender but still firm, about 20 minutes. Drain and move the potatoes and cauliflower to the prepared casserole dish.
- 3
Heat the olive oil in a skillet over medium heat; cook and stir the onion in the hot oil until translucent, 5 to 10 minutes. Transfer the cooked onion to the potato mixture.
- 4
Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the slices on paper towels and crumble over the potato mixture, reserving the bacon grease in the skillet.
- 5
Melt the butter into the bacon grease in the skillet over medium-low heat; whisk the flour into the butter and bacon grease mixture. Gradually stir the cream into the flour mixture until smooth; add the milk if the cream sauce is too thick. Whisk in half the Swiss cheese, half the mozzarella cheese, garlic powder, salt, and pepper until the cheeses are melted.
- 6
Pour the cream sauce over the potato mixture and toss to coat; top with the remaining Swiss cheese and mozzarella cheese.
- 7
Bake in the preheated oven until the casserole is bubbling and the cheese is lightly browned, about 30 minutes.
