Bruschetta Chicken Casserole

Bruschetta Chicken Casserole layers tender, herb-seasoned chicken over buttery orzo with garlicky tomatoes, then finishes with a melt of mozzarella. Fresh basil pesto and a drizzle of balsamic glaze add bright, sweet-tangy depth for a lively contrast to the rich, savory base. It’s a comforting bake ideal for a weeknight dinner that still feels special enough for guests.

Bruschetta Chicken Casserole
  1. 1

Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking dish with cooking spray.

  2. 2

Spread the orzo evenly in the prepared baking dish. Add the broth, 2 tablespoons melted butter, garlic, 1/2 teaspoon salt, and pepper; stir to mix. Distribute the tomatoes evenly over the top.

  3. 3

Place the chicken breasts on a cutting board and trim any visible fat. Drizzle the remaining 2 tablespoon melted butter over the chicken, then sprinkle with Italian seasoning, the remaining 1/4 teaspoon salt, and red pepper flakes. Set the chicken over the tomatoes and cover the baking dish with foil.

  4. 4

Bake in the preheated oven until the chicken is no longer pink in the center and the juices run clear, about 60 minutes. An instant-read thermometer inserted into the center should register at least 165 degrees F (74 degrees C).

  5. 5

Remove the foil and sprinkle the chicken with mozzarella cheese. Bake 5 to 7 minutes longer, until the cheese is melted.

  6. 6

Drizzle pesto and balsamic glaze over each serving and garnish with basil.
