    Bring a large pot of salted water to a boil. Cook the potatoes in the boiling water until tender, 8 to 10 minutes. Refrigerate the potatoes for 8 hours to overnight.

    Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.

    Grate the cooked potatoes into a large bowl. In a small bowl, combine the melted butter, onion, parsley, salt, and pepper. In a separate small bowl, mix the sour cream and milk.
