Preheat the oven to 425 degrees F (220 degrees C).

  3. 3

Slice the chicken breasts horizontally to make 4 thin chicken breasts.

  4. 4

In a small bowl, mix together the Cantazaro herbs, garlic granules, onion powder, salt, and black pepper; season the chicken on all sides with this mixture.

  5. 5

Pour olive oil into a deep cast iron skillet or another ovenproof skillet and heat over medium-high until the oil is hot.

  6. 6

Add the chicken and sear until golden, 3 to 4 minutes per side.

  7. 7

Turn off the heat and transfer the chicken to a plate.

  8. 8

Add the orzo to the skillet; pour in the chicken broth and balsamic vinegar.

  9. 9

Return the chicken to the skillet along with any accumulated juices.

  10. 10

Scatter the cherry tomatoes around and place slices of fresh mozzarella on top of the chicken.

  11. 11

Bake in the preheated oven until an instant-read thermometer inserted near the center of the chicken registers 165 degrees F (74 degrees C), about 20 minutes.

  12. 12

If needed, turn on the oven’s broiler and broil until the cheese is golden, about 2 minutes.

  13. 13

Sprinkle with basil and drizzle with balsamic glaze to taste.
