    Heat a heavy skillet over medium-high heat until hot. Season the steak generously with salt and pepper. Trim any excess fat from the steak. Set the steak in the skillet with the fattest side down and cook until the fat is browned, about 2 minutes. Keep cooking until the steak is browned, about 2 minutes.

    Add butter to the skillet and cook until the butter is browned. Flip the steak and cook, basting with the browned butter, for 2 minutes more. Transfer to a plate. Cover loosely with foil and let the steak rest for 7 minutes to absorb the juices. Serve the steak with a pat of butter.
