- 1
Season the steaks with 1 teaspoon salt and 1/2 teaspoon pepper. Heat 1 tablespoon oil in a large deep skillet over high heat. Add the steaks and cook without moving them until browned, about 2 minutes. Flip and cook for 1 more minute. Remove the steaks from the skillet and set aside.
- 2
Add the remaining oil to the skillet and reduce the heat to medium. Add the onions, the remaining salt and pepper, and cook, stirring occasionally, until softened. Add the garlic and cook for 1 minute. Pour in the wine and scrape the bottom of the skillet to loosen any browned bits. Add the tomatoes and oregano and bring to a simmer. Simmer, stirring occasionally, until the tomatoes soften, about 5 minutes.
- 3
Crush the tomatoes with a potato masher or the back of a spoon. Stir in the tomato paste and olives to combine. Simmer for 2 minutes.
- 4
Return the steaks and any accumulated juices to the skillet and coat the steaks with the tomato mixture. Cook until the steaks are heated through, 2 to 3 minutes. Remove from the heat, add the parsley, and serve with crusty bread or over pasta or rice.
