Candied Sweet Potatoes
  1. 1

Gather all the ingredients. Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.

  2. 2

Bring a large pot of water to a boil. Add the potatoes and cook until slightly underdone, about 15 minutes; drain and peel when cool enough to handle.

  3. 3

While the potatoes cool, combine 2 cups marshmallows, butter, brown sugar, cinnamon, and nutmeg in a large saucepan over medium heat; cook, stirring occasionally, until the marshmallows are melted.

  4. 4

Stir the potatoes into the marshmallow sauce, mashing about half of the potatoes and breaking the rest into bite-sized chunks. Transfer to the prepared baking dish.

  5. 5

Bake in the preheated oven for 15 minutes.

  6. 6

Sprinkle the remaining 1 cup marshmallows evenly over the top and continue baking until the marshmallows are slightly toasted and golden brown, about 5 minutes.
