Citrus-Cardamom Carrot Jam

Citrus-Cardamom Carrot Jam blends tender grated carrots with orange and lemon for a bright, gently tangy spread balanced by warm cardamom. Citrus-Cardamom Carrot Jam

    Assemble all the ingredients.

    In a large saucepan, combine the water, orange zest and juice, lemon zest and juice, and the carrots. Bring to a boil over medium-high heat, stirring occasionally. Reduce the heat to medium-low and simmer, stirring occasionally, until the carrots are tender-crisp, about 15 minutes.

    Stir in the sugar, cardamom, and salt until the sugar dissolves, about 30 seconds. Continue to simmer over medium-low, stirring occasionally, until thickened and a candy thermometer reads 220 degrees F (104 degrees C), 40 to 45 minutes.

    Skim off and discard any foam from the top. Pour the carrot mixture into a 16-ounce jar.
