Citrus-Cardamom Carrot Jam
Citrus-Cardamom Carrot Jam blends tender grated carrots with orange and lemon for a bright, gently tangy spread balanced by warm cardamom. It’s glossy and spoonable, ideal for topping scones with cream, spreading on toast or crostini, or pairing alongside roasted meats. Serve it at brunch, afternoon tea, or as a versatile condiment on a cheese board.

In a large saucepan, combine the water, orange zest and juice, lemon zest and juice, and the carrots. Bring to a boil over medium-high heat, stirring occasionally. Reduce the heat to medium-low and simmer, stirring occasionally, until the carrots are tender-crisp, about 15 minutes.

Stir in the sugar, cardamom, and salt until the sugar dissolves, about 30 seconds. Continue to simmer over medium-low, stirring occasionally, until thickened and a candy thermometer reads 220 degrees F (104 degrees C), 40 to 45 minutes.

Skim off and discard any foam from the top. Pour the carrot mixture into a 16-ounce jar.
