- 1
Make the stew: Put the black beans in a large bowl, cover with water, and soak for 8 hours or overnight. Drain the beans.
- 2
Place the drained beans in a heavy pot with 2 quarts water. Bring to a simmer over medium-high heat. Lower the heat to low and simmer until the beans are cooked but still very firm, 1 1/2 to 2 hours.
- 3
Stir the chopped dried beef into the pot. Add the bay leaf and pork chop bones, stir, and simmer over low heat for another 2 hours.
- 4
Meanwhile, cook the bacon in a large dry skillet over medium heat until almost crisp. Add the linguica and Italian sausage links; cook, stirring often, until the meats are browned, about 10 minutes. Remove the meats, keeping the accumulated fat in the skillet. Slice the Italian sausage into chunks.
- 5
Brown the onion and garlic in the reserved drippings in the skillet over medium heat until the onion is translucent and soft, stirring to deglaze the pan, about 5 minutes. Season with cumin, coriander, cayenne pepper, salt, and black pepper. Add the parsley; cook and stir until wilted, about 2 minutes.
- 6
Stir the onion-spice mixture into the pot with the beans. Add the bacon, both sausages, and the pork chop meat. Pour in enough water to just cover the meats. Raise the heat to medium-high and bring to a simmer. Reduce the heat to medium-low and cook, uncovered, until the beans are very soft and the liquid starts to thicken, about 1 hour, stirring occasionally. If the beans start to look dry, add more water.
- 7
Meanwhile, make the bread crumbs: Heat the olive oil in a skillet. Add the bread crumbs and cook, stirring, until toasted. Stir in the Italian parsley and orange zest.
- 8
When the beans are cooked, discard the bones. Ladle the stew into bowls and top with the toasted bread crumbs.

How easyChef Pro Scores This Recipe
easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.
The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.
Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.
Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
