Meanwhile, heat 1 tablespoon olive oil in a medium skillet over medium heat. Add chicken and season with salt and pepper. Cook, stirring, until the chicken is no longer pink in the center and the juices run clear. An instant-read thermometer inserted into the center should register 165 degrees F (74 degrees C). Remove the chicken from the skillet and set aside.
