Chocolate Scotcheroos

Chocolate Scotcheroos are chewy, peanut butter–infused rice cereal bars topped with a glossy layer of melted chocolate and butterscotch. Sweet, nutty, and slightly crunchy, they set up into tidy squares perfect for bake sales, potlucks, or an after-dinner treat. The classic combo of peanut butter and butterscotch adds nostalgic candy-bar flavor in every bite.

    Coat a 9x13-inch baking dish with cooking spray.

    Make the bars: In a 3-quart saucepan, combine the corn syrup and sugar. Cook over medium heat, stirring often, until the sugar dissolves and the mixture starts to boil.

    Take off the heat and stir in the peanut butter until fully blended. Add the rice cereal and stir until evenly coated. Press the mixture into the prepared baking dish.

    Make the topping: In a 1-quart saucepan over low heat, melt the chocolate and butterscotch chips, stirring constantly. Spread evenly over the cereal mixture. Let sit until firm, about 20 minutes. Cut into 24 bars.
