Clams and Chourico

Clams and Chourico brings tender shellfish together with smoky Portuguese sausage in a dark beer and tomato broth that’s aromatic with garlic and oregano. Clams and Chourico

    Place the clams in a large pot with enough water to cover them.

    Stir in the cornmeal.

    Let the clams stand for about 20 minutes.

    Rinse the clams thoroughly before cooking.

    Heat the olive oil and the garlic in a large pot over medium heat.

    When the garlic is fragrant, add the chourico, the onion, and the red pepper flakes.

    Cook for 2 or 3 minutes, then pour in about 3/4 of the beer.

    Let it simmer for a few more minutes, then add the clam juice, the tomatoes, and the rinsed clams.

    Cover and simmer until all the clams have opened.
