  1. 1

Combine the chicken, buttermilk, eggs, hot sauce, 1 tablespoon salt, and 1 tablespoon black pepper in a large bowl and stir until coated. Cover and refrigerate for at least 20 minutes or up to overnight.

  2. 2

In a large bowl, combine the flour, remaining 1 teaspoons salt, remaining 1 tablespoon black pepper, onion powder, garlic powder, paprika, oregano, and cayenne; whisk until well mixed. Set a wire rack over a rimmed baking sheet.

  3. 3

Remove the chicken from the refrigerator. Working with one piece at a time, lift it from the marinade and let the excess drip off into the flour dredge. Drop the chicken into the flour dredge, coat evenly with the flour mixture, and press the dredge onto the chicken. Set the pieces on the prepared wire rack. When all pieces are coated, dredge and press each piece a second time, then return the chicken to the wire rack.

  4. 4

Pour oil into a large Dutch oven to a depth of 1 inch and heat over medium-high until it reaches 350 degrees F (175 degrees C). Place a clean wire rack over a paper towel-lined baking sheet.

  5. 5

Add a few chicken pieces to the hot oil and cook, turning once or twice, until golden brown on the outside, no longer pink at the bone, and the juices run clear, 10 to 15 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Keep the oil temperature around 320 degrees F (160 degrees C) during cooking. Remove the chicken to the prepared clean wire rack. Return the oil to 350 degrees F (175 degrees C) and repeat to fry the remaining chicken. Serve immediately.

How easyChef Pro Scores This Recipe

easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.

The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.

Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.

Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
