Cowboy Tacos

Cowboy Tacos bring a bold, sweet-savory punch with seasoned pork simmered in chili beans, chunky salsa, and a whisper of apricot, then finished with briny olives. Each shell delivers hearty, smoky depth and a touch of fruitiness for balance. Great for a quick weeknight dinner or a casual crowd-pleasing spread.

  1. 1

Place the pork and taco seasoning in a resealable plastic bag. Press out the extra air, seal the bag, and shake to coat.

  2. 2

Warm the oil in a skillet over medium-high heat. Add the pork to the skillet and cook, stirring now and then, until it is no longer pink.

  3. 3

Mix in the beans, salsa, and apricot preserves; lower the heat to low and simmer until warmed through, about 10 minutes.

  4. 4

Spoon 1/3 cup of the pork mixture into each taco shell and top with the sliced olives.
