Pour hot water over the chanterelle mushrooms, cover, and let them soften for 30 minutes. Once softened, lift the mushrooms out of the water and chop them; discard the soaking water.

Melt the butter with the truffle oil in a large saucepan over medium-high heat. Add the onion, shallot, and garlic; cook and stir for two minutes until the onion starts to soften. Add the fresh mushrooms; continue cooking until the mushrooms soften and begin releasing their liquid. Stir in the chopped chanterelle mushrooms, and cook for 3 minutes more.

Add the Arborio rice; cook and stir for a few minutes until the rice looks glossy and is well coated with the onion mixture. Stir in the white wine and cook until it is nearly evaporated.

Reduce the heat to medium; add 1/3 of the hot chicken stock. Cook and stir until the chicken stock is mostly absorbed, about 5 minutes. Keep the risotto gently simmering as you stir in the chicken stock. Add 1/2 of the remaining stock, and stir for 5 minutes more. Finally, add the remaining stock, and continue cooking until the risotto is creamy and the rice is tender, about 5 minutes more. The rice should not be completely soft, but still have a little firmness when you bite it. Add a little water if needed to cook the rice to this point.

Remove the risotto from the heat, and stir in the heavy cream and Gorgonzola cheese. Season with salt and pepper to taste, and serve.
