Curry Udon

Curry Udon features springy udon noodles in a thick, curry-scented vegetable broth enriched with soy sauce and a hint of maple for balance.     Put the carrots and the onion in a microwave-safe bowl; pour in the water. Cover and microwave on high until tender, about 4 minutes.

    Heat the oil in a large pot over medium heat. Whisk in 1/2 cup plus 2 tablespoons flour to make a paste, 1 to 2 minutes. Stir in the curry powder. Slowly whisk in the hot vegetable stock until combined and smooth, about 3 minutes. Stir the steamed carrots and onion, soy sauce, and maple syrup into the curry broth.

    Bring a large pot of water to a boil. Cook the udon noodles in the boiling water, stirring now and then, until tender yet slightly firm, 10 to 12 minutes. Drain. Add the noodles to the curry broth.
