Stir in the remaining 1 3/4 cups flour, the remaining 1/4 cup water, the egg white, oil, and salt until well mixed; the dough will be very wet and sticky. Cover the bowl with plastic wrap or a clean kitchen towel, place it in a warm spot, and let rise until doubled in volume, about 2 hours.

Gently move the muffin disks to the skillet in batches to avoid crowding; brown on both sides for 10 to 12 minutes, flipping halfway through. Keep flipping until the muffins are evenly browned and cooked through, 7 to 8 minutes more per side. Transfer the muffins to a wire rack to cool completely (this is essential because you can't split muffins unless they are cool). Repeat with the remaining clarified butter and muffin disks.
