Berry Oat High-Fiber Morning Muffins

Berry Oat High-Fiber Morning Muffins are tender and gently spiced, with warm notes of cinnamon and nutmeg wrapped around juicy raspberries, blueberries, and blackberries. Applesauce keeps them moist with a wholesome oat crumb and subtle sweetness, perfect with coffee or as a grab-and-go start to the day. Serve them fresh from the oven for weekday breakfasts or a weekend brunch spread.

  1. 1

Preheat the oven to 400 degrees F (200 degrees C). Line 12 muffin cups with paper or foil liners, or grease the cups if not using liners.

  2. 2

In a large bowl, combine oats, all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, salt, applesauce, egg whites, milk, brown sugar, oil, and vanilla. Mix until blended. Gently fold in raspberries, blueberries, and blackberries; the batter will be lumpy and thick. Divide the batter evenly among the prepared muffin cups.

  3. 3

Bake in the preheated oven for 15 to 17 minutes, until a toothpick inserted into the center of a muffin comes out clean.

  4. 4

Let the muffins cool in the pan for 5 minutes before transferring them to a cooling rack.
