Weeknight Flat Iron Steak with Red Wine Mushroom Sauce
Weeknight Flat Iron Steak with Red Wine Mushroom Sauce pairs a peppery, paprika-kissed crust with a rich reduction of dry red wine and tender portobello mushrooms. The meat stays juicy from a quick sear while the pan sauce brings depth and subtle heat. Serve for a relaxed dinner or an at-home date night when you want big steakhouse flavor with minimal fuss.

- 1
Let the steaks sit until they reach room temperature.
- 2
In a small bowl, mix 2 tablespoons of olive oil, cayenne pepper, black pepper, ground paprika, salt, mustard powder, and garlic powder to form a paste.
- 3
Use a fork to prick the steaks all over, then rub them thoroughly with the spice paste, working it into the meat.
- 4
Place a large, heavy skillet over high heat and add the remaining 3 tablespoons of olive oil. Heat the oil until it just starts to smoke, then quickly sear the steaks until the exterior is browned while the center stays blood red and just warmed, 2–3 minutes per side. An instant-read thermometer inserted into the center should register 115 degrees F (46 degrees C).
- 5
Use tongs to remove the steaks from the skillet. Pour the dry red wine into the skillet and bring it to a boil, scraping the browned bits from the bottom with a wooden spoon. Stir in the sliced portobello mushrooms, then cook and stir until the mushrooms are cooked and have released their liquid, about 5 minutes.
- 6
Return the steaks to the skillet on top of the mushroom-wine sauce. Reduce the heat to LOW and cook until the sauce reduces and thickens, about 5 minutes. Transfer the steaks to a serving platter and pour the mushroom sauce over them to serve.
