Mini Mac and Cheese Cups

Mini Mac and Cheese Cups bake into crisp-edged, golden bites with a creamy, cheesy center from mozzarella and sharp Cheddar. A hint of seasoned crumbs adds texture while the muffin-tin shape makes them perfect for parties, lunchboxes, or a cozy snack. Serve warm for the best balance of oozy middle and gently toasted top.

  1. 1

Preheat the oven to 350 degrees F (175 degrees C). Grease a muffin pan with cooking spray.

  2. 2

In a small bowl, stir together bread crumbs, olive oil, and salt until well combined; set aside.

  3. 3

Bring a large pot of lightly salted water to a boil. Cook the pasta in the boiling water until slightly firm, about 8 minutes. Drain and return the pasta to the pot.

  4. 4

Stir the beaten egg and butter into the cooked pasta until evenly coated. Stir in the mozzarella cheese, 1 cup Cheddar cheese, and milk until well combined. Spoon the mixture into the prepared muffin tin. Sprinkle with the remaining 1/2 cup Cheddar cheese. Sprinkle the bread crumb mixture over the tops.

  5. 5

Bake in the preheated oven until the topping is nicely browned, about 30 minutes. Let the mac and cheese cups set for a few minutes before removing them from the pan.
