Creole Shrimp Mac and Cheese

    Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until slightly firm, about 8 minutes.

    While the macaroni cooks, melt 1 tablespoon butter in a large skillet over medium heat. Add shrimp and sprinkle with Creole seasoning. Cook, stirring constantly, for 4 minutes. Add the garlic and cook until the shrimp is pink, about 2 minutes. Turn off the heat.

    Drain the macaroni and rinse under cold water to stop the cooking; set aside. Put the pasta pot back on the stove and melt the remaining 3 tablespoons butter over medium heat. Add the flour and whisk until dissolved, about 2 minutes. Add the half-and-half and heat for 3 minutes.

    Whisk in the cheeses until melted, about 5 minutes. Add the mustard and cook for 2 minutes. Turn off the heat.
