    Preheat the oven to 350 degrees F.

    Coat the inside of a 1 1/2-quart casserole dish with non-stick cooking spray.

    Mix the Cheddar and Colby Jack cheeses in a medium bowl and set aside.

    Cook the macaroni in boiling salted water as directed on the package; drain well and set aside.

    Meanwhile, melt the butter in a medium saucepan over low heat.

    Stir in the flour, stirring constantly, until smooth and bubbly.

    Gradually whisk in the milk and half & half.

    Cook, stirring constantly, until the mixture comes to a boil and thickens (about 2 to 3 minutes).

    Remove from the heat and add the cayenne and black peppers, and 2 cups of the reserved cheese mixture; stir until the cheese melts and the sauce is smooth.
