    Combine 3 1/2 cups bread flour, oats, whole wheat flour, brown sugar, oil, and salt in a large food processor with the dough blade. Start the processor and slowly pour in enough of the yeast mixture for the dough to form a firm ball and pull away from the sides, about 1 minute. Process for an additional 30 seconds to knead.

    Transfer the dough to an oiled bowl and turn to coat. Cover with a damp cloth and let rise until doubled in size, about 1 hour. Punch the dough down, divide it in half, shape each half into a loaf, and pinch the seams and ends closed.
