Grilled Bay Scallops
Grilled Bay Scallops showcase sweet, tender shellfish kissed by the grill and bathed in a lemon–garlic butter with soft onions. The quick marinade and brief cook keep the scallops juicy, while the warm sauce adds bright citrus and rich, savory notes. Ideal for a weeknight dinner or a light summer entrée when you want bold flavor fast.

- 1
Rinse the scallops and pat them dry with paper towels.
- 2
Preheat an outdoor grill to medium heat and lightly oil the grate.
- 3
Melt the butter in a frying pan over medium heat. Add the onions and the garlic; cook until soft and translucent, about 5 minutes. Remove from the heat and stir in the lemon juice and the salt.
- 4
Place the scallops in a large bowl and toss with the butter mixture. Let stand for about 2 minutes.
- 5
Remove the scallops from the butter mixture, reserving the excess in the bowl. Cook the scallops on the preheated grill using a wire grill basket until golden, tossing occasionally for even cooking, 3 to 4 minutes.
- 6
Meanwhile, return the butter mixture to the frying pan and bring it to a boil over high heat. Reduce the heat to low and keep warm while the scallops cook. Toss the grilled scallops in the warm butter mixture and serve.
