Charred Halloumi with Fresh Herb–Berry Salsa

Charred Halloumi with Fresh Herb–Berry Salsa balances the salty, squeaky richness of grilled cheese with a juicy mix of blueberries and red currants. Fresh mint, cilantro, and marjoram add garden-bright notes, while a hint of habanero brings gentle heat. Serve as a lively appetizer or a light lunch, especially when you want something vibrant and summery.

Charred Halloumi with Fresh Herb–Berry Salsa
  1. 1

Put the blueberries and red currants in a mixing bowl. Add 2 tablespoons mint, 2 tablespoons cilantro, the marjoram, the habanero, the olive oil, the agave syrup, and the juice of 1 lime. Stir to combine and set aside.

  2. 2

Heat a nonstick griddle over medium-high. Toast the cashews, stirring frequently to prevent burning, until browned, 8 to 10 minutes. Move the cashews to a plate and set aside. Lower the heat to medium and brown the halloumi cheese slices, 2 to 3 minutes on each side.

  3. 3

Set the halloumi cheese on a plate, spoon the berry salsa mixture on top, and sprinkle with the remaining 1 tablespoon mint and cilantro. Chop the cashews and scatter them over the halloumi. Garnish with lime wedges from the remaining lime. Serve right away.
